There was a time when food was hand-crafted at home from simple, farm-fresh ingredients, and eaten with respect. Somewhere along the way, people were taken out of food production, and then the real ingredients themselves. Food chemists invented flavor enhancers, dough conditioners, binders, preservatives, and modified basic food starches beyond recognition. Bread and pizza were transformed from comfort food into chemistry experiments.

Here at Against The Grain™, we sincerely believe that you are what you eat. Our milk comes from a local family farm that bottles the milk less than 24 hours before we receive it. Our eggs are delivered to us directly from the hens by a local family egg farm. We use expeller-pressed non-GMO canola oil and low fat mozzarella cheese made from the milk of dairy cows that are routinely veterinarian inspected. Our cheese has no added growth hormones, no anti-caking agents, and is natamycin free. We never use any binders, dough conditioners, flavor enhancers, stabilizers, or preservatives. In fact, you can pronounce and recognize all of our ingredients. From the farm families to our family to yours, we are making gluten free delicious—naturally!

Who Is Against The Grain?

The Green Mountains of Vermont are home to a number of artisan bakers, cheese makers, and specialty food entrepreneurs. We take great pride in supporting local agriculture and we embrace Vermont’s creative economy. Here at Against The Grain, we have developed unique, gluten-free breads and pizzas from the freshest ingredients. They are prepared by staff that cares deeply about the quality of our ingredients and the people behind them. We work with family farms and local producers to craft honest breads and pizzas, made with nothing but our ingenuity and simple ingredients.

Against The Grain Gourmet™ began in the summer of 2005. It is the result of a long quest by Thomas and Nancy Cain to find dietary normalcy for people who require a gluten free diet. We’re a family-owned commercial bakery located in one of the coolest towns in the United States—Brattleboro, Vermont. On the banks of the Connecticut River, we bake all-natural, artisan breads, pizza shells, and pizzas in a 22,000 square foot bakery that is a dedicated, 100% gluten free facility. Our products contain no gluten, wheat, corn, soy, rice, sugar, yeast, peanuts, or tree nuts. We believe strongly in supporting the local economy as well as providing livable wages and health benefits to our employees.
